The magnetic field is produced by a permanent magnet.
The adjusting of the torque is made through a mechanical set collar (magnetic  shunt).

In order not to get a magnetic leakage flux but a good heat dissipation, you should employ non-ferrous metal when integrating or building-on additional components.
